My Daniel Fast drink…Berry Goodness!

*8 to 10 fresh strawberries
*8 to 10 fresh black berries
*1 cup of crushed ice
*1/4 to 1/2 cup of water
*1 to 2 tbsp Agave (optional)
*1 tbsp Chia seeds

Simple drink to sustain you on your Daniel Fast.

Chia seeds are an unprocessed, whole-grain food that can be absorbed by the body as seeds.

Christmas Cookies

Cookies

This is my all time favorite cookie recipe and I usually only make them around Christmas, so I have decided to call them Christmas Cookies, clever I know!

Christmas Cookies
2 sticks of butter
1 cup firmly packed brown sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups of self rising flour
1 teaspoon cinnamon
1/2 teaspoon salt (optional)
3 cups Quaker Oats (I use quick, uncooked)
1/2 cup raisins
1/2 cup craisins
3/4 cup chocolate chips
3/4 walnuts
1/2 coconut flakes

Directions:
1. Heat oven to 325 F (dark cookie pan)
2. Beat together butter and sugars until creamy.
3. Add eggs and vanilla; beat well.
4. In a separate bowl mix together flour and cinnamon.
5. Stir in oats, raisins, craisins, chocolate chips, walnuts and coconut
6. Combine wet and dry ingredients.
7. Drop by rounded tablespoonsful onto ungreased cookie sheet.
8. Bake 10 to 12 minutes or until golden brown.

The most I can wait is a minute for cooling, then I devour!

World’s Best Grilled Cheese

PhotoCollageOne of my favorite things I enjoy about eating out, is trying to come up with a copycat recipe for the dish I had at that particular restaurant. Panera has a new, delicious, warm mouth-watering grown-up grilled cheese. After having it for the first time last week, I was determined to make it at home. Well, I did it! Below is my recipe.

Fontina Grilled Cheese
Tuscan Roasted Garlic Loaf (Fresh from the Publix bakery)
2 slices Swedish Fontina Cheese (Boar’s Head)
2 slices Vermont White Cheddar (Boar’s Head)
Six Cheese Italian Blend (bag of shredded cheese-Publix brand)
Shallot & Chive Gournay Cheese (Boursin brand)
Stick of butter

Directions
Cut two medium size slices of the Tuscan loaf. Spread the shallot and chive cheese on each slice. Take two slices of the Fontina and Vermont cheese and place them on one slice of bread. Preheat skillet over medium heat. Rub the stick of butter all over the pan. Set the sandwich down on the skillet. Place the lid on the sandwich to trap the heat. After a few minutes, flip the sandwich over. Once each side is lightly browned, add the six cheese Italian blend on top of the sandwich, then flip it over. At this time, I take the pan off the burner and let it sit for a few minutes until the cheese is golden crusted.

This sandwich is great by itself or you can have it with a delicious creamy soup…I recommend a tomato.

BB’s Guacamole

It’s Friday, which means family fun food night!

We usually have pizza and watch a movie, but if you’re planning to make tacos, here’s a yummy recipe for Guacamole.

BB’s Guacamole:
-1 Hass Avocado (Ripened)
-1/4 cup of Diced Tomatoes
-2 tbsp Finely Chopped Green Bell Pepper
-2 tbsp Finely Chopped Sweet Onion
-1 tsp of Lime Juice
-1/4 of Garlic Powder
-1/8 tsp of Sea Salt
-1/8 of Cumin
-Dash of Cayenne
-Dash of Red Pepper Flakes

*Cilantro is also a nice ingredient to add, but I didn’t have it in the frig this day.

In a large bowl place the scooped avocado, add the salt, cumin, red pepper flakes and cayenne and mash. Then, fold in the onions, tomatoes, green bell pepper, and garlic. Add 1 teaspoon of lime juice. Let sit at room temperature for 1 hour (Ha!,if you can wait that long) and then serve. Feel free to experiment with the different portions of ingredients, I do, that’s how I came up with this recipe! Enjoy and HAPPY FRIDAY!!!

Day 11: Thankful for neighbors

Tonight Victoria and I made Oreo Truffles and they are so yummy if I do say so myself! We made these delicious treats for our new neighbors, that just moved into the neighborhood last week. Below is the recipe.

Oreo Truffles (Oreo Cream Cheese Balls)
Ingredients:
-16 oz Oreo Package
-8 oz Cream Cheese
-16 oz Semi-Sweet Chocolate Chips

Preparation:
1. Prepare a baking sheet by lining it with parchment paper.

2. Finely crush the cookies in a blender or food processor.

3. If using a food processor, add the cream cheese in large chunks and pulse a few times to until the candy consistency is that of dough. If you don’t have a food processor, stir together the softened cream cheese and crumbs until the candy is well-mixed.

4.Place the candy in the refrigerator to firm up for about 1 hour.

5. Form 1-inch balls and roll between your hands until they are round. Place the candies on the prepared baking sheet. Refrigerate them while you prepare the dipping chocolate.

6. Place the chocolate in a microwave-safe bowl and microwave until melted, stirring after every 15 to 30 seconds. Allow the chocolate to cool slightly, but do not let it harden.

7. Dip the candy balls in the melted chocolate and place on the parchment sheet.

8. Refrigerate them for another hour before devouring them!

30 Acts of Thanksgiving (Day3)

IMG_4605Today we are thankful for Daddy! We decided to make one of his favorite dishes, Chicken Marsala and for dessert Tres Leche! Each of the girls also made a card describing why they are so thankful for their Dad!

IMG_4607Chicken Marsala Recipe:
Ingreditents
1/4 cup all-purpose flour for coating
1/2 tsp salt
1/4 tsp ground black pepper
1/4 tsp oregano
1/2 tsp garlic powder
4 skinless, boneless chicken breast halves – pounded 1/4 inch thick or cut for desired thickness
4 tbsp butter
4 tbsp olive oil
1 cup sliced mushrooms (if desired)
1/2 cup Marsala wine
1/4 cup Cream of Sherry wine
*add some heavy whipping cream for thickness

Directions

  1. In a shallow bowl, mix together the flour, garlic, salt, pepper and oregano. Coat chicken pieces in flour mixture.
  2. In a large skillet, melt butter in oil over medium heat. Place chicken in the pan, and lightly brown. Turn over chicken pieces, and add mushrooms (if desired). Cook until lightly brown then pour in Marsala and Sherry wine. Cover skillet; simmer chicken 10 minutes, turning once, until no longer pink and juices run clear.

I couldn’t decide what I wanted for breakfast yesterday and I didn’t have time to waste so, I threw these items together and feel in love.

Fresh Berry Goodness Smoothie
-6 oz container of Vanilla Yogurt (I used Yoplait)
-one hand full of fresh Blueberries
-one hand full of fresh Raspberries
-a good squeeze of honey
-1/3 cup of milk
-1/4 cup of crushed ice
(you can also add some fresh strawberries)
